By default, only a few proofing languages are available in Word 2016 on the Managed Desktop (even though there seems to be a long list).
Available languages have a tick with "ABC", to the left of the language name (see example below).
To install a wider (but not exhaustive) selection of proofing languages in Word, you need to install Microsoft Office 2016 Proofing Tools-SCR from the Software Centre.
This is a big download (681MB!). When it's installed, more languages will automatically become available in Word.

First, select the language you require from the bottom list (making it sure it has a tick next to it). It will then appear in the top list, along with other languages previously used for proofing.
Then, to change your current proofing language, select from the top list and press OK.
There is also the option to Set As Default.
The proofing language can be found within View > Language.
